Forgejo has no releases/latest/download route, so the docs install link was broken. The script now lives at the repo root and is served from the raw URL; it still resolves the latest release for the compose files.

• Move install/install.sh to install.sh, update docs link
• Drop install.sh from release assets
• Release workflow pins FILES_VERSION in install/.env.example
• Rename compose service/container app -> files (Caddy upstream and docs updated)
