Stop running workflows on pushes to main that can't affect the build, and fix the knip failure on the release script.

• e2e.yml: ignore docker-compose.prod.yml on push. The release workflow's "Release $VERSION" commit only bumps the image tag there, and ci.yml already ignores it, but E2E ran on every release.
• ci.yml and e2e.yml: ignore renovate.json on push.
• knip.json: ignore .forgejo/scripts/create-release.mjs. It is only invoked from the release workflow, so knip reported it as an unused file.

pull_request triggers are unchanged so required checks still report on PRs.
